Oatmeal Chocolate Chip Power Bites

Here’s a quick, no bake recipe for a tasty, nutritious snack. They are just sweet enough to satisfy a cookie craving and just high enough in protein and fibre to double as a powerful snack. I try to always keep a batch in my freezer for a quick energy boost in the afternoon or post workout snack.

Makes 21 balls

·       1 cup rolled oats

·       1/2 cup flaxseed meal (aka ground flaxseeds)

·       ¼ cup hemp hearts

·       ¼ cup pumpkin seeds

·       1/2 cup tahini (sesame seed butter or natural peanut butter)

·       1/3 cup honey (or try 1/4cup for less sweet)

·       1 teaspoon vanilla extract

·       1 teaspoon cinnamon

·       ¼ teaspoon salt

·       1/2 cup chocolate chips

Mix all ingredients in a bowl.  Wash and wet your hands slightly to prevent them from sticking.  Scoop out about 1-2 Tbs and roll into a small ball. I call them power bites.    Your hands will get sticky after rolling every 3-4 but it’s worth it!  Just keep rinsing your hands.  Alternatively you can press the dough into a square bread pan to make bars.   Freeze them for about 20 minutes to help them set.  The bites or bars are ready to eat right away but the texture improves after you freeze them.   Keep them in the freezer and use them for a quick breakfast or snack between meals.   Eat them slowly… they are a good source of fibre and very filling.  Serving size: 1-3 bites depending on your hunger.
